    It looks like the Central Park Zoo culls its herd and sells the meat to local restaurants each year. This 1926 article mentions 3 bison were killed as part of the cull.

    Richard Norton and everyone else who keeps up with our Bain posts, we seem to be switching years back to 1908, but the Bain number on this is an outlier, probably a negative that was out of order. A few other LC-B2-2888 numbers date from November of 1913, so that may when this one was taken.
