Although the spelling varied at first, the name became Princes Street.

The street was never known as Princess Street and would only ever have been written that way in error (a common and easy mistake right enough). It was named after the sons of George III, the British monarch at the time of the New Town's construction in the 1760s. en.wikipedia.org/wiki/New_Town,_Edinburgh
