www.nysonglines.com/new.htm says the the Exchange Buffet opened in 1885 and claims it was the world's first self-service restaurant.

LOC also has this and 8 other Bain photos in an online set called "Stock trading on the New York Curb Association market, 1907-1920" www.loc.gov/pictures/item/2005678948/ It must have been something to see this live..especially in the snow or rain. More on the Exchange Buffet restaurant, part of a chain, where you simply told the cashier how much you owe and there were no checks. September 1884, when the New Zealand Loan & Mercantile Agency Co acquired the former Trebeck wool store and warehouse at the NE corner of Bridge/Loftus Sts... trove.nla.gov.au/newspaper/article/163267032 - Sydney Mail, 6th September, 1884...'We beg to notify WOOLGROWERS and FARMERS that we are now taking possession of our NEW WOOL STORES, at the Corner of Bridge and Loftus Streets'...this is the earliest reference I've found to the New Zealand Loan & Mercantile Agency Co occupying the building... trove.nla.gov.au/newspaper/article/64034464 - Illustrated Sydney News, 17th March, 1883...sketch of the building then either completed or nearing completion...I gather this sketch was drawn from the plan rather than from the actual building...there are several differences... Date range 1887-1890: Empire Hotel, SW cnr Pitt/Hunter Sts (seen here in the mid distance on the rhs), built/opened 1887... trove.nla.gov.au/newspaper/article/115449519 - Freeman's Journal, 19th November, 1887...'A New Sydney Hotel'... Exchange Hotel, SW cnr Pitt/Bridge Sts...the incarnation of the Exchange Hotel that we see in this pic was condemned in January 1890...it was subsequently demolished and replaced by a new hotel with an ornamental tower and cupola...I haven't managed to establish dates for the demolition and construction of the new hotel...just going on a Licensing Court application, the new hotel appears to have been built (and running) by ca.
