    I thought onions too, but the foliage in the background suggests some sort of potato.

    I think its onions for sure and they are taking off the outer husks/skins with that machine. Doing it right out there in the field, that must have been way before a factory.

    This is another of those photographs in which the cap badge shown doesn't match the regimental name given in the text. There could be a reason for that especially by 1917 when wounded men were returned to other regiments once they had recovered.
