  I thought onions too, but the foliage in the background suggests some sort of potato.

  I think its onions for sure and they are taking off the outer husks/skins with that machine. Doing it right out there in the field, that must have been way before a factory.

  The bag clinches it for me: onions are more often in mesh bag such as seems to be the case here
